Vegan Date Milk Candy is a quick and easy recipe that uses only 5 ingredients. Made without refined sugar, dairy free and gluten free. In addition, it is a perfect alternative to dulce de leche, as it is healthier.
This vegan date dulce de leche is made with healthier ingredients than regular dulce de leche, so it's great as a side dish for a healthy snack or can be used as a filling in healthy cakes or desserts. Furthermore, you can also use it as a sweetener for porridge or smoothies.
INGREDIENTS FOR THE RECIPE OF VEGAN DAME MILK RECIPE
- Dates – jumbo or medjool (medjoul) dates are best for making this homemade vegan treat. Dates are natural, fleshy, juicy and taste like caramel. Your dates should be soft, not hard (although you can use dried dates, they won't taste as good and will make your blender work harder!) Medjool dates are considered the best dates in the world! And believe me, once you've tried these, you'll never want the smaller, pitted ones again.
- Milk – you can use any non-dairy milk of choice. I like to use homemade coconut milk or almond milk, but oat milk or cashew milk are great too!
- Vanilla Extract – is included in the recipe to help intensify the flavor and sweetness.
- Sea salt – just a touch, to harmonize the flavors!
- Star anise – optional, I used it to infuse the dates.

HOW TO MAKE VEGAN DATE MILK WITH DATE
- Put the water in a pan with the anise and let it boil for 5 to 10 minutes, turn it off and add the dates. Hydrate the dates in this flavored drink until they are soft and the liquid looks like syrup, leave for about 30 minutes. This makes it easier for your blender to create a smooth date paste.
- Strain the dates (reserve the syrup to use in your smoothie, green juice or porridge, because this water is very sweet, so you won't need to sweeten your preparation). Remove the pits from the dates with a knife, cutting them in half and removing the seed.
- Then add the pitted dates, plant-based milk, sea salt and vanilla extract to a high-speed blender and blend until smooth and creamy. You can also use a food processor if you don't have a blender. Be sure to scrape the sides of the blender jar every minute or so to blend the ingredients evenly. This whole process will take about 10 minutes, depending on the quality of your blender!
- Finally, transfer the vegan date jam to a bowl and serve, or refrigerate until ready to serve.

Does vegan date need to be refrigerated?
Yes, due to its high water content it should be stored in the fridge in an airtight container. Lasts up to 2 weeks if stored correctly.
Can the vegan date be frozen?
Absolutely, you can freeze it for up to a few months in an airtight container or in an ice cube tray for individual servings. Thaw in the fridge overnight and shake well before serving.
This vegan date dulce de leche is delicious and naturally sweet. It definitely still has sugar (natural sugar), but I love the fact that the dates are able to provide the rich dulce de leche-like flavor, but with the benefit of fiber and a host of vitamins and minerals.
Dates are a great source of potassium, copper, magnesium, vitamin B6, niacin, calcium, iron and vitamin K. The estimated glycemic load is 39, which is a relatively low value. So this indicates that dates provide energy over a long period of time.
