The components 

  • Four hundred grams of crushed digestive biscuit. 
  • One hundred grams of melted butter. 
Filling ingredients: 

  • Six hundred grams of cream cheese. 
  • Three quarters of a cup of sugar. 
  • Two hundred and fifty grams of whipping cream. 
  • Three eggs. 
  • A stick of vanilla. 
  • A teaspoon of lemon peel humans. 
  • One tablespoon of starch. 
  • A quarter teaspoon of salt. 
Ingredients for the top layer: 

  • A package of ready-made pie filling or any kind of fresh fruit as desired. 
How to prepare

  • Rub the biscuits with the butter, then spread it at the base and edges of the cheesecake mold.
  •  Put the mold in the refrigerator for thirty minutes until it holds together. 
  • Open the vanilla pod and remove the granules from it.
  •  Beat eggs with vanilla, salt and lemon zest in an electric mixer. 
  • Add sugar and mix well. Add the cream cheese, whisking until the mixture becomes smooth. 
  • Add whipping cream and starch and whisk the ingredients well. 
  • Wrap the cheesecake mold with aluminum foil from the base to the edges. 
  • Place the mold in a tray containing cold water. 
  • Pour the mixture over the biscuit layer and bake it in a preheated oven at a temperature of one hundred and forty degrees Celsius for seventy-five minutes, taking into account adding ice cubes to the tray from time to time, to avoid boiling the water in the tray. 
  • Remove the mold from the oven and leave it until it cools completely, then put it in the refrigerator for a whole night. 
  • Carefully loosen the edges of the cheesecake mold, decorate the surface with pie filling or fresh fruits, and serve it alongside coffee or tea as desired.

Cherry cheesecake

  • Four hundred grams of biscuits. 
  • Two tablespoons of honey. 
  • Fifty grams of soft butter. 
Filling ingredients: 

  • Twenty-four pieces of cream cheese. 
  • Half a cup of powdered sugar.
  • Half a cup of yogurt. 
  • Two hundred and fifty milliliters of cold heavy cream. 
  • Half a cup of water. 
  • Seven grams of gelatin powder.
Ingredients for the top layer: 

  • Seven hundred and fifty grams of pitted cherries. 
  • Two hundred grams of cherry jam. 
How to prepare 

  • Grind the biscuits in a food processor, then rub them with butter and honey. 
  • Spread the biscuits at the base of the cheesecake mold, pressing the base gently.
  • Place the mold in the refrigerator during the filling preparation period.
Prepare the filling: 

  • Dissolve gelatin in half a cup of hot water, then leave it to cool. 
  • Put the cream cheese with the sugar in the bowl of the electric mixer, then turn the mixer on medium speed until they mix. 
  • Add the yogurt milk while continuing to whisk, then pour the gelatin over the mixture while the mixer is rotating.
  •  In another bowl, whisk the cream until fluffy. 
  • Add the cream to the cheese and milk mixture and whisk the ingredients until a homogeneous mixture is formed. 

Cheesecake application: 

  • Pour the filling mixture over the biscuit layer, and put the mold in the refrigerator until it cools down for at least five hours.
  • Put the cherry jam in a deep saucepan and stir until it becomes liquid, then add the cherries to it.
  •  Leave the mixture on the fire until it holds together, then transfer it to a deep plate and leave it until it cools. 
  • Take the mold out of the refrigerator and transfer the cheesecake to a suitable serving dish. 
  • Pour the cherry mixture over the cheesecake and serve it alongside Arabic coffee or any hot drink as desired.
